The keto diet is a high-fat, moderate protein, low-carb diet. Although many of our meals are high fat, some of which are saturated fats when in ketosis, the body begins to burn fat for energy rather than storing it. If you’d like to replace saturated fats, like coconut oil, butter, and cheese, with monounsaturated fats, like avocado, avocado oil, and olive oil- that’s completely fine. Some people may experience a temporary increase in cholesterol levels, which will usually balance out and often improve over time on keto.
